This week we are heading way back in time, but really not, we are just going back to the basics of nutrition.

The paleo diet has become a very popular diet because it shows its effectiveness for weight loss and general health improvement and have been supported by different studies the past few years.

That's why it is currently one the most popular “diet” in the world.

The processed foods and sugar are excluded and replaced with meat, fish, eggs, vegetables, fruits, nuts and seeds, sea salt,.... (grass-fed, pasture raised and organic)

Breakfast

Here is an example for breakfast

Eggs With Vegetables, Fried in Coconut Oil

Here’s what you will need:

(1 person serve)

  • 2 Eggs

  • Coconut Oil

  • 1 carrot

  • some cauliflower

  • some spinach

  • sea salt

Directions:

  • Put the coconut oil on pan, turn on the heat, Put veggies on pan. If frozen, heat until thawed., Put the eggs on, Add spices. Either a spice mix or just sea salt and pepper., Stir fry until ready.

Lunch

Tuscan Chicken Skillet Recipe

Here’s what you will need:

  • Ingredients

  • 1 lb. chicken breast tenderloins;

  • 1 onion, diced;

  • 3 cloves garlic, minced;

  • 12 oz. mushrooms, sliced;

  • ½ cup sun-dried tomatoes, chopped;

  • 15 oz. fire-roasted diced tomatoes;

  • 1 tsp. oregano;

  • ½ tsp. thyme; Cooking fat;

  • Sea salt and freshly ground black pepper;

Directions:

Melt some cooking fat in a large skillet placed over a medium-high heat. Add the chicken and brown for 3 minutes on each side. Remove chicken and set aside on a plate. Add some more cooking fat to the skillet if necessary. Add the sliced mushrooms in a single layer and brown for a few minutes per side. Remove from the pan and set aside. Add the onion and cook until soft, about 4 minutes. Add the garlic and sun-dried tomatoes and sauté for 2 to 3 minutes. Stir in the diced tomatoes, oregano, thyme, and season with salt and pepper to taste. Transfer the chicken back to the pan. Cover and cook until the chicken is cooked through, about 10 to 12 minutes. Return the mushrooms to the pan, combine well, adjust the seasoning if needed, and serve.

Dinner

Portobello Mushrooms Paleo Taco

Here’s what you will need:

  • 4 portobello mushrooms

  • ¼ large onion (chopped)

  • 0.7-1 lbs (0.3-0.4 kg) ground beef (or substitute turkey)

  • ½-1 red chili pepper (diced)

  • 1 clove garlic ½ Tbsp ghee

  • 1.5-2 Tbsp paleo taco seasoning salt to taste Toppings

  • fresh cilantro to taste

  • 2 green onions (finely cut)

  • ½ cup cherry tomatoes (sliced)

  • ½ cup kalamata olives (sliced)

  • ½ cup guacamole

Directions:

Preheat oven to 400 F. In a large frying pan or medium pot, cook onions in ghee over medium heat until soft. Remove stems and spoon out mushroom insides. Dice finely and add to onions. Add ground beef and chili peppers. Once browned, add taco seasoning and salt (if needed). Bake mushrooms for 10 minutes top-down for 10 minutes then flip over and bake another 10 minutes. Spoon ground beef into mushrooms, then approximately 2 Tbsp onto the beef, followed by tomatoes, olives, green onions, and cilantro.
